When walking in the Sant’Ambrogio market district it is practically unavoidable to enter the world of Fabio Picchi. Not that one would ever want to miss such a thing. Occupying several buildings around the intersection of Via de’ Macci and Via del Verrocchio, Picchi’s local empire comprises a Café, Trattoria, Restaurant and a combined dining/performance space. At any moment you’re liable to see a chef hurrying across the street with a pot of steaming Ribollita, or Fabio himself in classic chef’s attire, jumping from one of his culinary workplaces to another. The four spaces offer a satisfying range of prices, culinary traditions and levels of formality – the traditional, the innovative, the simple and the lavish, all find expression. Whether it’s enjoying a perfect espresso kept warm with dainty lids, the sumptuous restaurant dinner or the pared-down, no-bookings trattoria, the name Cibrèo will almost certainly remain in both your memory and your best-of list for Florence, as it does in ours.
